Slime shouldn't be a problem for the servos. Most modern servos are pretty well sealed. I've run a lot of planes with exposed servos and never had a problem with one because of oil/dirt, etc. Just make sure you give everything a good wipe down at the end of the day and they should be fine.
That being said, if you're really concerned you can take the clear plastic packaging that plastic spinners come in and cut out the two halves of the "cone". Glue one half on just in front of each servo with some canopy glue or something and thy will act as a sort of clear slime deflector.
